Cabernet Sauvignon
These varietals are grown in our north field above the Tasting Room and are the three main grapes that make up a Bordeaux blend. This ‘field blend’ is harvested mid-October and the grapes are fermented together from the start, then age for 18 months in French oak barrels. The results are a medium style red, not too dry, and suitable to all wine drinkers.
Fun Fact: If one of the varietals in a blend is 75% or more, the wine can actually be named after that varietal!
