Obsidian
We witness the transformation of our boldest estate varietal, Tannat, and its late harvest picking & soak on the skins, into a sweet tartness with long legs & 8% residual sugar. She’s also harvested mid-November at 36 Brix and then aged 4 months in stainless steel. The result is a wine with a sweet tartness and a crisp finish complemented by a heady perfume of raspberry, blueberry, and cherry.
It's the new mimosa, pairing beautifully with a slice of Quiche Lorraine, or a light lunch with baked Brie, Maple Bacon Onion Jam & butter crackers
